Can a character have only a single profession? Like being a pure Elementalist for instance?

no, in order to advance into Post Searing you will need to choose a secondary profession. You can always just ignore that second profession when it comes to using it's skills, etc. But you'll still need to select one.

The more I play the less I am using both professions, granted I am currently only doing PvE.
It seems you are really limited on attribute points and spreading them to thin does not seem as good to me as focusing on 2-3.5 only (3.5 is 3 skills with leftover in 4th)
